  • 150g sticky black rice
  • 200 ml of water
  • 200 ml coconut milk
  • 50g coconut sugar

For the sauce and decoration:

  • 150 ml of coconut milk
  • 1 tbsp cornstarch

For the caramelized mango:

  • 1 ripe mango
  • 3 tsp coconut sugar
  • Toasted sesame seeds


Preparing the mango sauce


Rinse the rice with clean water, then drain carefully. In a saucepan or pressure cooker, add the rice, water and coconut milk. Cook according to package directions, depending on whether you are using a pressure cooker or a saucepan.


After cooking, add the coconut sugar and a pinch of salt. Mix well, cover and let sit while you prepare the sauce and mango (about 10 minutes).


For the sauce, dilute the cornstarch in a little coconut milk, then add the rest of the milk and incorporate a pinch of salt. Heat and bring to the boil, then simmer for a few minutes until thickened. Keep warm.


Rinse the mangoes with clean water. Cut them in half lengthwise, along the core. Score the flesh with the tip of a knife to facilitate cooking.


Preheat a plancha or wok. Place the mangoes flesh side down directly on the hot plancha or wok. After 5 minutes, remove the mangoes using a spatula and sprinkle the flesh with coconut sugar. Continue cooking for an additional 5 minutes until caramelized.
