For 16 coconut pearls:

  • 100g glutinous rice flour
  • 100ml coconut milk
  • 35g powdered sugar
  • 50g grated coconut

Pour la farce :

  • 50g shelled mung beans
  • 25g of sugar
  • 40g grated coconut


Preparing the mango sauce


Start by soaking the mung beans in water for at least 2 hours to soften them.


After letting them soak, drain them and put them in a saucepan with just enough water to cover them.


Cook over low heat, stirring regularly, until the beans resemble puree. As it cooks, you will notice a scum forming on the surface of the water; you can remove it with a spoon during cooking.


When the texture of the beans approaches that of puree, add the sugar, mix well, then add the grated coconut. You should get a dry puree. If this is not the case, cook over low heat, continuing to stir to release the remaining water. Set aside.


In another saucepan, heat the coconut milk over low heat until boiling. Add the sugar, then remove from the heat. Set aside.


In a salad bowl, put the glutinous rice flour and gradually add the coconut milk, mixing well to obtain a smooth and homogeneous dough that does not stick to your fingers. If it sticks, add a little extra flour to make it even.


Form balls of rice and bean dough. To do this, use a simple method: form 8g balls of mung beans and 16g balls for the rice paste. This makes for a good balanced dose of rice and beans, as well as coconut pearls that are neither too small nor too big to eat. Start by forming your mung bean balls and set them aside.


Then, do the same with the rice dough: form a ball and flatten it by stretching it. Then take a bean ball, place it in the center and wrap it with rice paste. Once closed, place the pearl in the palm of your hand to give it a homogeneous ball shape. Set it aside and continue forming your beads.


After making your pearls, you can cook them in two ways: either in boiling water until they rise to the surface, or by steaming for 15 minutes.


After cooking, immediately roll the pearls in grated coconut to cover their entire surface.


The pearls can be eaten hot or warm and kept for a week in the refrigerator.
