  • 1 ripe mango, peeled, pitted and diced
  • Coconut cream for garnish
  • Grated coconut (optional, for garnish)

Preparing the mango sauce

Rinse 200 g of glutinous rice under cold water until the water runs clear.

In the rice pressure cooker, mix the rinsed glutinous rice, 400 ml of coconut milk, 100 g of sugar.

Close the pressure cooker lid and set cooking to the “rice” function. If your pressure cooker does not have a specific setting for sticky rice, you can use the standard rice setting.

Once cooking is complete, let the rice sit for 10 to 15 minutes to completely absorb the liquid.

Meanwhile, prepare the diced mangoes.

When the rice has rested, mix gently with a wooden spoon to aerate and evenly distribute the coconut milk.

Serve the sticky rice in individual bowls. Add the diced mango on top.

Pour a drizzle of warm coconut cream over the rice and mango.

If desired, sprinkle with shredded coconut for an extra touch of texture.
