  • 150g sticky rice
  • 50 g coconut sugar
  • 20 cl of water
  • 20 cl of coconut milk
  • 4 to 8 slices of fresh pineapple


Preparing the mango sauce


In a saucepan, combine the coconut milk and water and bring to a boil over medium heat, stirring occasionally to prevent the mixture from sticking to the bottom of the saucepan.


Add the coconut sugar to the pan, stir well to dissolve, then simmer over low heat for a few minutes until the mixture begins to thicken slightly.


Add the sticky rice to the pan and mix gently to incorporate it into the milk-sugar mixture. Cook over low heat for about 20 minutes, stirring regularly, until the rice becomes soft and most of the liquid is absorbed. If the rice is still too crunchy, add a little more milk and continue cooking for a few minutes while watching carefully.


While the rice cooks, prepare your serving plates. Arrange a slice of pineapple in the center of each plate.
Use a pastry ring the same diameter as the pineapple to shape the rice. Fill the circle with the cooked sticky rice, packing lightly with the back of a spoon.
