  • 150g Kampot peppercorns
  • 2 tablespoons of soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon of palm sugar
  • 1 chopped onion
  • 4 cloves of garlic, chopped
  • 125 ml of water
  • 1 tablespoon cornstarch
  • Vegetable oil

Start by cleaning the crabs by brushing them thoroughly to remove any dirt or debris. Then remove the legs and claws from the crabs and lightly break them with a hammer or rolling pin to make cooking easier.

In a frying pan, heat some vegetable oil over medium heat and add the chopped onion and garlic. Sauté until the onion becomes translucent.

Add the crabs to the pan and cook for about 5 minutes on each side.

In a bowl, mix the soy sauce, oyster sauce, palm sugar and 1 tablespoon cornstarch with 125ml water to form a paste. Add the cornstarch paste to the pan and stir to combine. Simmer over low heat for about 10 minutes until the crabs are cooked through and the sauce has thickened.

If you want to serve the mango hot as a side dish, fry the remaining mango pieces in the same pan for a few minutes until they caramelize slightly.

Serve hot with white rice.
