But what would this composition be without the majestic presence of the mangrove crab, delicately arranged on this bed of noodles and vegetables? Its tender and tasty flesh brings a refined touch and a maritime dimension to this emblematic dish. • 700 g Chinese noodles
  • 4 mangrove crabs (or crab meat)
  • 10 Kampot pepper grapes
  • 1 tablespoon soy sauce
  • A piece of fresh ginger
  • 1 clove of garlic
  • 2 onions
  • 1 red pepper
  • 3 branches of Chinese cabbage
  • 8 mini ears of corn
  • 2 carrots

For the sauce:

  • 1 tablespoon of corn flour
  • 2 tablespoons dark soy sauce
  • 1 tablespoon oyster sauce
  • 60 ml of water

Start by chopping the onion and garlic separately, then set them aside.

Cut the carrots and the piece of ginger into julienne strips, and set aside.

Wash the Chinese cabbage and pepper carefully and cut into thin slices, then set aside.

In a bowl, mix the sauce ingredients until smooth, then set aside.

Cook the noodles in boiling water until “al dente” according to package directions. Drain them well.

Heat oil in a wok over medium-high heat.

Add the chopped garlic and fry it quickly for a few seconds to release its aroma.

Then add the ginger, julienned carrots, corn, Kampot peppercorns and chopped onions. Brown them over high heat for about 3 minutes.

Add the halved crabs (or crab meat) and continue to stir frequently, letting them cook for about 3 more minutes over high heat.

Pour the previously prepared sauce into the wok and mix it with the vegetables.

Gently add the drained noodles to the wok and toss them carefully to coat them with the sauce and vegetables.

Continue cooking for about 2 more minutes, making sure the noodles are hot and well coated with the sauce.

Serve hot, with a dollop of soy sauce for those who want extra flavor.
